There’s a lot of interpretations of Mexican style lager. One key element should be drinkability. A session lager of sorts. Generally brewed with corn. Flaked corn is more popular but we chose to use corn grits which need to be cooked separately before being added to the mash. While cooking grits is much more labor intensive, we feel it gives a little bit more of that corn flavor. Flavors and aromas of corn, cereal, bread crust, and floral hops. Light bodied with a crisp/dry finish. Pours a brilliantly clear pale straw with a light white head

Anthony and Ali are tying the knot on the summer solstice of 2025, marking nearly a decade of love and adventure together. The couple began their journey in 2016 and got engaged during a magical trip to Japan in 2024. To celebrate their wedding, Bad Weather Brewery—where Anthony has been part of the team since winter 2019—has crafted a special beer in their honor. Brewed with heart, hops, and a hint of sunshine, this limited release captures the warmth of their story and the brightest day of the year. Here's to love, laughter, and perfectly timed brews!

Grodziskie - Polish oak smoked beer
Polish Style Grodziskie. Packaging manager Tyler’s fist recipe with us. A smoked wheat ale. Brewed with 100% oak smoked wheat malt. Also known as "Polish Champagne". This beer is low in abv with some pleasant pear esters and surprisingly drinkable. Not nearly as smoky as your typical Rauchbier. High carb per the style. Landed at a whopping 3.3% ABV!

Traditional Bavarian lager
'Helles was invented in Munich by the Spaten brewery in 1895. Aromas of clean, cracker like pilsner malt. Ever so subtle floral/spicy hop aroma. Bready pilsner malt flavor that is clean and slightly sweet, and a soft hop bitterness. Crisp, clean, dry traditional lager character that pours pale straw with a creamy white head and is brilliantly clear or stupid bright! Some will argue that it is the “Perfect Beer”. '

Aged in J. Carver Bourbon and Single Malt Whiskey Barrels for over a year.
Rich aroma’s of roast, chocolate, coffee, black liquorice, plums, raisins, with subtle vanilla/oak character. Light alcohol on the nose. Deep flavors of roast, coffee, chocolate, black currants, raisin, toffee and moderate bitterness. A pleasant alcohol warming with smooth/pleasant oak tannins. Full bodied. Pours jet black with a brown head.

Our latest Black IPA is bursting with flavors and aromas of resinous pine, grapefruit, and woody hops. Backed with subtle roasted coffee and chocolate notes. Light bodied with a moderate hop bitterness that finishes dry. Pours a clear jet black with a dark tan head

Giant Beaver
During the Ice Age, Minnesota was home to the Giant Beaver, the largest rodent ever known from North America, the size of a black bear. It lived alongside mammoths, scimitar-toothed cats and even the first humans to settle into Minnesota.
A State Fossil for Minnesota
Minnesota is just one of four U.S. states that does not have a fossil as a state symbol. The Science Museum of Minnesota set out to change that and in late 2021 held an online vote for what it should be. The very clear winner was the Giant Beaver, Castoroides. Known in Dakota as Ċapa and Ojibwe as Amik, this ancient relative of the modern beaver is an excellent choice. The museum has brought it to the legislature 3 times now, but no luck yet. Winter’s Night
Brett Barrel Aged Old Ale
Aged for 3+ years in our resident Tawny Port barrels inoculated with Brettanomyces yeast, this beer boasts notes of cherries, brett funk earthiness, bread crust, sherry, caramel and a pleasant acidity. We brewed a fresh batch to back sweeten the beer prior to packaging to give it a little bit of body and extra depth of character. Medium bodied with a low bitterness and a slightly acidic finish. Pours with a slightly amber haze and a tan head. To quote the famous beer writer Michael Jackson, “it is best to be drunk in half pints by a warm fire on a cold winter’s night”.

Introducing our newest year round Hazy IPA. Brewed with 2 publicly available US hop varieties Vista and Cashmere. Hop flavors and aromas of stone fruit, lime, melon, papaya, and an herbal note. Medium bodied with a low bitterness and a soft finish thanks to the flaked oats. Pours a hazy straw color with a fluffy white head.

Bursting with tropical, citrusy hops and a touch of biscuity malt, this year-round IPA balances pineapple and melon aromas with a hint of pine.

FUNKomancer
Funky Brett ipa
While Brettanomyces yeast is generally known for its "funky" character it can also create some really lovely tropical notes as well. We used a combo yeast for this beer. Saccharomyces to do the bulk of the fermentation then the Brett does its thing after. We added a big dry hop charge of HRC-003 hops along with Sultana and Loral Cryo hops to really bring out the tropical character. Loads of pineapple funk with Mango and Citrus notes. Medium bitterness with a dry finish.
